    ... We were fortunate enough to have a tasting of unaged cheese, and cheese aged for 12, 24, 40 and 60 months. We both agreed 40 months was the best. After the parmigiano wheels are made, the remaining whey is then heated again and a small amount of vinegar is added. It is mixed and heated some more, until new curds form.     ... That day we had a fabulous meal in a little osteria with all Italians -- the best pumpkin ravioli I've ever had! We spent that afternoon at the Ferrari museum learning about the amazing history of that family and looking at the cars. Modena is only about a 40 minute driv from here.

    ... and radicchio that was delicious. That was followed by the pasta course of ravioli. Half the ravioli were ricotta and herb filled, and half were filled with butternut squash. We continued with a radicchio salad and ended with a "chocolate salumi". Of course, there was plenty of Lambrusco flowing.     ... of that day. Amazing pasta! At 2pm we had a factory tour booked and pulled onto the Ferrari site. No photos allowed here. Only three of us on tour. Felt very special. They took us to see the F1 site where all the previous F1 vehicles have been sold to clients (six a year, valued from 1.2m to 2.9m) and are kept there to be maintained and raced on special days organised by Ferrari. How the other half live! Then we saw FXX and 599 racing Ferrari's which are only allowed on sports ...

    ... Room was basic but clean and bed very comfy. Went to restaurant attached to hotel that we had booked for dinner at 7.45pm. Very Italian but luckily one lady could speak some English so we managed. Stu likes their local sparkling red wine so we may have a wine convert! Stu had steak and I tried a local chicken dish followed by tiramisu and a cream puff. Well ready for bed then and the factory tour ...
