Course 3 was The Red Mullet with cabbage flavoured with vanilla from Tahiti, and a foamy broth with lemon bergamot. The fish was sublime and two small fillets rather than some slab – a very refined dish which was accompanied with a glass of 2011 Chapoutier Hermitage Chante-Alouette. Again a well chosen companion.
