... and Valencian paella is different. Meat is sautéed in the pan (chicken, pork, rabbit), then green vegetables are added (beans, leeks, etc), then garlic, tomatoes and water to make a broth. The rice is added last and by the time it is cooked, it has that "risotto" look (moist). It is not however the actual paella that makes this day so special......it is the fact that the entire town is sitting in the streets eating together!

... Benicassim is where the affluent Spanish live, attracted more by the long sandy beaches and high annual sunshine hours than the invasion from the British, I'm sure! Mind you, the motor homers are all retired and all over 50 and though relatively well behaved, they are all of the same mind - laugh, sing, dance and enjoy every minute! ... animals. One of the evenings we went to the nearby village and walked up to the tower. From there we could see all of oropesa and marina d'or. There was a hole in the floor and the grandpa explained that it is where the prisoners were kept. There were fed like dogs by dropping food down to them. It was pretty sad to hear.
