      This class was so much fun. We learned to make Italian and French versions. I think the French version is easier; and they taste the same. Our teacher, Eric, was born in France and then lived in the U.S. So he speaks like an American. Eric is a pastry chef and worked for Pierre Herme here in Paris. I learned a lot from him.       Today I'm feeling like ****. I can't seem to kick this head cold and it is worse today. I couldn't sleep so got up at 5 am so I didn't disturb Aidan.       So sleeping in didn't happen. I woke up a bit before 8 worrying about whether I'd put the disc lock on the bike or not. I always do of course, but I just never remember doing it. Plus I couldn't remember what time breakfast finished, and if it finished at 9am then I needed to get moving.
