This little cheese is amazing - a soft goats cheese which only takes 2 hours to manufacture and then about 2 weeks of aging - is wrapped in dried chestnut leaves and is so far the most absolutely outstanding cheese of our trip! Each 7-8cm diameter cheese requires about 1L of goats milk to manufacture, so you can understand that the production is pretty flat out!
