... tapping is usually done in March/April when they have had a freezing cold night and a warmerish day - the temperature difference needs to be at least 10 degrees. The maple water is extracted into buckets and taken to the boiler. It takes 40litres of evaporated maple water to make 1 litre of maple syrup! When we walked outside we could see the holes in the trees where they have been tapped over and over.
