This weekend, CUEF took us to the centre-ville of Lyon, and it was such a great experience! I've actually technically been to Lyon twice for traveling to and back from Paris, but I've never gotten to see the city before! So this week we finally started actual cooking. This week was all about meat.
Chicken - The week started with chicken. The first step was to break down the chicken, including cutting off the head (they were dead, but it was still weird having their heads attached, apparently this is how it is done in France). Even stranger was for the Bresse chicken (Premium chicken, one chicken per 10 m2 and feed corn), was that they also had the feet attached.
