    After a couple of bus rides we arrived to the wonderful quiet town of Manantiales where we visited Soli and Anita, old friends of Lane from Aspen!     ... attended my Red Ginger cooking class at 4pm. Learned a few dishes including the tom yum soup, the pad thai, the spring roll, the duck and water mellon salad, etc. We each got a taste of the famous sea bass and the teacher told us how it's made. Most importantly, we got all the recipes. But somehow I feel the same dishes from the restaurant were better than what we're taught to make .... We then had dinner at Red Ginger tonight. I ...

    Ok, I must be so relaxed because I didn't wake up until 10:45 AM. I never do this!! And, I think I actually slept. No insomnia.

    I've been thinking about asking the owner if he needs a new cook so I can stay here, but I don't think he can afford me:-) Or maybe I can't afford him:-) I would want to live in the Junior Suite full-time.
