... It was a fascinating process to watch from beginning to end. This producer has 6 huge kettles and each one yields 2 large wheels of cheese (if he's lucky). The farm only produces 12 wheels of cheese a day, while some commercial producers can make 200 wheels a day. After our cheese tasting, we drove back toward Modena to La Vecchia Dispensa, an authentic balsamic vinegar producer. We had a "vertical tasting" (similar to our wine tasting at Petreto Winery) and tasted 5 ...

Today we left the villa early and started our 4 hour drive toward Emilia-Romagna and Parma. We stopped at a rest stop off the autostrada at the half-way point--it was unlike any rest stop we have in the States. A quick coffee and some shopping later, we were on our way to Parma for lunch. We had a "light lunch" (by Italian standards) at Osteria della Stazione Felino, a lovely restaurant with fantastic food. We started with a pastry filled with ...

The cheese has 3 grades depending on how much air is in the cheese, too much gets it a third grading and is not allowed to carry name Parmigiano Reggiano. From there we went to the Ferrari museum in Manarello a short ...

... who had no records of an Australian tour group which seemed strange. I rang John and he told me that they had been changed. We enjoyed seeing Modena in a much more lively situation in normal business hours and without rain. Eventually we met their tour group later in the afternoon at the Duomo. It was most exciting seeing Sonya, David, John & Kathy as well as Rosa Matto, her husband and her ...

Water taxis took our tour group and luggage to Piazza Roma where we boarded a 24 seat bus with the title of " Rose Matto Nort Italy Tour"! Three hours later we were in Modena a city of 180,000 and the home to Pavarotti, Ferrari and Balsamic vinegar. Our lunch was at the three star Michelin restaurant Osteria Francescana run by chef Massimo Bottura who has been named the best chef in Europe. We ...
