... It was a fascinating process to watch from beginning to end. This producer has 6 huge kettles and each one yields 2 large wheels of cheese (if he's lucky). The farm only produces 12 wheels of cheese a day, while some commercial producers can make 200 wheels a day. After our cheese tasting, we drove back toward Modena to La Vecchia Dispensa, an authentic balsamic vinegar producer. Today we left the villa early and started our 4 hour drive toward Emilia-Romagna and Parma. We stopped at a rest stop off the autostrada at the half-way point--it was unlike any rest stop we have in the States. A quick coffee and some shopping later, we were on our way to Parma for lunch. On the outskirts of Modena we visited a Parmesan cheese factory which makes Parmigiano Reggiano. It makes about 100L of milk to make 10 kg of cheese which is matured over 24 months. The cheese has 3 grades depending on how much air is in the cheese, too much gets it a third grading and is not allowed to carry name Parmigiano Reggiano. Water taxis took our tour group and luggage to Piazza Roma where we boarded a 24 seat bus with the title of " Rose Matto Nort Italy Tour"!
