We also tried some burrata & watched the experts make buffalo mozzarella .     Today was spent visiting a famous cheese business called Beppino Occelli. It is located in the Maritime Alps, about 1hour from where we are staying. This business started in a small village & has grown into one of Italy largest. They are now maturing 120 tons per years & employ 90 people.
