... Japan seems to be a bit different. For starters, tofu is the main item on the menu. This includes cooked tofu of course but more often than not it is served cold as a large block on top of which green onions, soy sauce or dashi flakes (fish flakes, yes apparently this is considered vegetarian) on top.
