    ... taste is Wow! A warming peasant dish in the nose to tail tradition. I dont get anywhere near finishing it. Michaels Rabbit is possibly the most tender I have ever tasted. A complete contrast in that it is a work of art in taste and presentation. Served with a dollop of sauce that turns out to be tandoori based but is so subtle. Again it is on another level of yum.     I'm feeling strong for the first time and enjoy today's ride. It is a warm, sunny day as we roll into Olargues, un des plus beaux villages de France. I have a little cry because it's just so stunning and because David isn't here to share it.
