        ... at one stage, to help the bacteria but now this is a chemical substitute. The old practice left a lot of egg yolks going to waste so a small cake was developed to use it up- cannelles, which again we had seen everywhere wine is grown but didn't make the connection. Unfortunatley, they are not that nice and very chewy- but don't tell any french people I said that, they seem to love them!
