It's another sunny day the Kansai region of japan and we have just spent the nights on tatimi mats in my friends house . ... Japan seems to be a bit different. For starters, tofu is the main item on the menu. This includes cooked tofu of course but more often than not it is served cold as a large block on top of which green onions, soy sauce or dashi flakes (fish flakes, yes apparently this is considered vegetarian) on top. I don't personally mind tofu, when cooked and flavored well it can be a tasty meat substitute...but having it for breakfast lunch and dinner can get rather ...
