Dogs bark and a cockerel crows to wake us early. From our distance, we can't see the previous night's fire damage but the acrid scent of singed ground is on the air. Terre di Himera is smack in the middle of the countryside but it's too far to walk to the Madonie park and its pretty hill villages.

Dinner was wonderful. Maria has built up a reputation during her first year of business, for her traditional Sicilian cooking. Tonight she lays on a full four-course dinner, with four antipasti and a choice of digestifs – including fresh pasta with courgette, lemon sorbet and a sweet local wine. The choice of Sicilian wines was also impressive. This is truly a foodie retreat.
