    ... so I headed off to get my trunks on. After about 96 goes on the pink one, these times with Jo and I participating, it was time for the big blue one.     ... pie. Moving on, we made the soup and sliced the tomatoes so they could be seasoned and roasted. The soup was quick and easy as was the veal strips and the broccoli souffle.     So many towns to choose from in Umbria…. Where to pick to base ourselves for our 9 night Umbrian stay? After much umming and ahhing we chose Spoleto, which turned out to be the perfect spot.
