... it is hard and aged - better for storage. In the hotter climes near the farms you get the fresher cheeses. Ricotta is king here. We know it as that tasteless stuff in the tub. The first activity for Day One in Shkodra was to visit the Castle of Rozafa at the top of the hill above town. This trip seems to be becoming a bit of a tour through fort and castle ruins through eastern Europe, but it continues to be fascinating.
