Second: I'm going to find a cheap hostel that doesn't rip you off for not reserving ahead. So out I go, with map of the city and an asterisk on where each hostel is. Now that the mountain village to big city shock has worn off, I ...

... host. If you stay somewhere great, you have a better memory of the city. However, as I write this I'm in a cheap hostel with trains going by. It's not so hard to jump on a bus or tram to get around. Here in Milan, I'll probably remember the city more than where I slept. If you're into gourmet, you'll probably want to save money for food...but fortunately I am also happy walking around with pizza so I can balance nice meals out with simple local specialties. And ...
