Lafayette Louisiana is about 2 hrs away from New Orleans, and known for its Cajun food (versus Creole in Nola). We went on an amazing food tour by local Miss Marie, who taught us that Cajun is actually an American *******ization of "Acadian," the name for a group of French settlers in Canada in the 17th century, many of whose relatives eventually ended up in Louisiana.

... up and had everything in the trailer by 8:15ish but as we went to accelerate the van got stuck in the mud and there was a slight hill so it was going no where. We tried to get it out for ages but to no avail so we went to find the owner Jim but apparently he was an hour and a half away so his neighbour Coleman came to help us in his 4x4 truck and even that got stuck before it was anywhere near us. I'm floored by the size of these smokers. If only I had a backyard to have a smoker - I'd be set! This room is filled with trolleys holding smoked meats ready to be prepared for sale.
