    Our first stop on the road to South America was an overnight in Dallas, Texas on Spencer's B-day. So, I scouted out a famous BBQ place that was close to the airport and our hotel - Hard Eight Texas BBQ was it! We ordered a tray of meat - seriously. We chose a sampler tray of different meat including; beef brisket, chicken jalapeno poppers, spicy sausage, and some beef skewers plus we added corn on the cobb. Everyone's favorite was the beef ...

    Christmas Day in Dallas started with the opening of presents with Larrissa and Aiden then a church service at St Ann at Coppell. The church was quite a magnificent structure similar to St Mary's Sydney in size but based on a modern design. Pews radiated out from the alter in the shape of a cross. Large high windows provided natural light with the normal stain glass. The church was bathed in red with banners and a mass of red poinsettia. ...
