    As a foodie I have to say that if you believe that it's difficult to find good food in Ireland or UK it is a myth!  Complete rubbish:-)  Like anywhere else in Europe the food is great and in fact very diverse. I didn't do any special research to find restaurants it was all on the fly, and even in the smaller towns there was good food and many of my European favorites.     ... pretty moderate for most of the year, Ireland averages a temp of 50 degrees with winters sticking around 40 degrees. England is much of the same average temp is 60 degrees, summers reach near 70 and winters stay about 40. Scotland further north into the Highlands can see winter temps near freezing.

    ... so we opted to fly out of Cork. Google flights is a great tool for doing a high level search, try a few options and see what works best for you.

    Once in Edinburgh we will travel by local transit and on foot. Edinburgh is known for their efficient and inexpensive bus service. We will also be taking a 3 day bus trip from Edinburgh to the Scottish Highlands with a tour company called Highland Explorers...I am not typically a fan ...

    In a couple of hours we'll be leaving Holland to begin the first leg of our journey. Somehow leaving on September 11 feels appropriate because, as tragic as it was, this day above all others reminds me of the strength and courage of Americans, both now and in those early days of the founding of the original colonies.
