    Our first stop on the road to South America was an overnight in Dallas, Texas on Spencer's B-day. So, I scouted out a famous BBQ place that was close to the airport and our hotel - Hard Eight Texas BBQ was it! We ordered a tray of meat - seriously. We chose a sampler tray of different meat including; beef brisket, chicken jalapeno poppers, spicy sausage, and some beef skewers plus we added corn on the cobb. Everyone's favorite was the beef ...

    So, I've been quite the slacker on updating this since Christmas, but when we're gone for 3 weeks there's quite a lot of catching up to do when we get back. During Christmas it was nice to see a lot of family and friends. Always good to have a break from the "real world."     ... got split up into teams, I was in the ZOOKEEPERS (aspiring auditors are not very creative no) for the rest of the week. Let’s just say that last week I learned a lot and I hope that some of it stuck with me! I even re-read some material taking a bath Thursday night, just to feel like I made more of an effort.
