... tourists aren’t so thick on the ground and restaurants cater more to
locals. In those places I had some very good regional cuisine. I ate two
restaurant meals in Trieste and both of them were delicious. Italians know how
to do pizza, pasta, and other Italian food well. Much of the pizza and pasta I
had in the Balkans, especially Croatia, was quite poor, but in Italy they know
how to serve their pasta al dente and their pizza thin and crisp.
