    July 1st was our opening day under new management. We had a full house... Shannon did a great job building up the customers of the old Big Eddie's Cafe.     I was really excited for Cajun country. I was sure I was going to get to speak French. And I LOVE speaking French and to think I could possible speak French in America of all places. Amazing. So we rolled into Houma and asked for a recommendation on breakfast. We were told the Bayou Cane Café had excellent beignets and coffee. Well what more could you ask for in life.

    Some moments just turn out to be gems. Take, for instance, our morning at Bayou Cane in Houma, LA. Houma is described as the "Venice of the US" (at least in one publication) due to the numerous canals running through the charming town.
