... off the excess liquid that is full of carbs for the pigs and cows to enjoy. The firmer cheese, full of protein and fat, is put in molds with a colander like base....Then set on a slanted metal counter that drains into a bucket. Scraps of the cheese were given to the kids to feed the chickens who were happy to entertain them. Meanwhile we sampled delicious whole milk, macaroons covered in cream, and one, two, and three year old cheeses. ...

Around the other side of Tshuggen and the Lauberhorn (mountains) and a nice fairly flat stroll of about an hour, lay Kleine Scheidegg, where we had been a couple of days earlier. We are finally here, and we don't even start hiking right away because we were just caught in awe. The mountains are beautiful from the base but now we were part of the picture.
