Parmigiano Reggiano and Balsamic Vinegar of Modena

... It was a fascinating process to watch from beginning to end. This producer has 6 huge kettles and each one yields 2 large wheels of cheese (if he's lucky). The farm only produces 12 wheels of cheese a day, while some commercial producers can make 200 wheels a day. After our cheese tasting, we drove back toward Modena to La Vecchia Dispensa, an authentic balsamic vinegar producer. We had a "vertical tasting" (similar to our wine tasting at Petreto Winery) and tasted 5 ...

... wines were sparkling for dinner which was a nice change of pace. We had a light Prosecco to start, a Lambrusco with the meal, and a sweet Moscato d'Asti with dessert. (Shout out to Aunt Janice and Melissa--I finally found your Moscato!--cm) It was definitely a day centered around food, and tomorrow the trend will continue. Area was immaculate, relatively quite and full of trees and plants. Then off to the production line, this was amazing. A moving belt moves every 19 minutes to a new station where a particular job is done on the car. Pressure! That was V8's and V12's are moved along every 72 mins. 31 cars are produced ...

Woke to the amazing view of Lake Lucerne which was promptly covered by fog in about 10 minutes! Amazing how quick the fog came down but thankfully by the time we were ready to go out the fog had lifted. We decided to explore the town and walked along the wooden bridge covered in flowers and found a cafe called Heini which served a great breakfast of a milky muesli bread, cheese, ham and croissants. Bought ...

... hung around for a while, went home to rest and change and then met them for dinner. We walked all the way to their hotel to see if we could find a restaurant along the way but we ended up back near our hotel and ate outside which was lovely. Food was fine (even though our friends had had a 3 star Michelin lunch as part of their gourmet tour)! It was a great night and it was lovely to meet up with good ...
