Went to Castillon brewery instead which specialises in Lambics made the traditional way which takes 1-3 years to ferment naturally rather than modern lambic methods that speed up the process of the natural airborne yeast.
Got to taste their Gueuze which is their standard lambic without anything else added. Very tart and acidic compared to other lambics I've tasted. Almost ...

... musique!”. It was a great end to a somewhat trying day. Really, this was the only difficult day of our trip and it was mostly due to the weather and being too ambitious about walking in the heat. I’m left with fond memories of Brussels, though I may not go out of my way to return.

My taxi driver asked me why I chose to stay in Brussels for a holiday. He said that most Belgians stay as far away as possible when they do on holidays. This weekend was so much fun. We had a few bumps along the way, but the city was so pretty and cozy and, most importantly, CLEAN. For the most part the people were very friendly, even though Jenny and I don't speak a word of French. And of course I got to see Emily (!) and meet a bunch of her Bain friends, and go to all the events (the fun ones, at least).
