      ... of wire fencing, In one place the road sign was covered with snow and we took the wrong turn, realising we stopped to reverse, suddenly there was a very loud rumble followed by an even louder crashing sound!       Today we are taking 42 bags of olive/leaves mix to the processor to make some olive oil. The family usually uses the first batch harvested for its own consumption. This is the organic batch. The process starts by dumping the bags into collectors to go up the conveyors to a vacuum to extract leaves. As they fall, they are washed and after they water is separated, they go to the grinder.       Today we starting harvesting. The day of picking the olive off the ground are over. Today they use nets spread out over the area and the use a olive tree beater. It's a long shaft with a rotating head that has several rubber sticks that beat the tree branches and knock the olive off. What I thought was a peaceful harvest, is anything but. You need a generator to power the beaters and they hit the branches, constantly making noise and shredding the tree as olives are thrown ...

      Today I made it out to the farm, where I will spend the next bit of time, being a farmhand. The owner is Kostos and his wife will be the main ones hosting. They have three sons that help run the hotel and will help with the harvest on the farm. They have several hundred trees that they will harvest over the next couple months.
