Canillo, Andorra sirsmonkey42... transformed. Snow everywhere. I went for an early morning walk to take some pictures of the same places I did before to show the huge difference. It's been snowing all day and even now as I write this I'm starting at snowflakes the size of tissues hit the window. I wouldn't be surprised if it was up to my waist tomorrow.

Boussenac, Midi-Pyrénées, France 2totango... meat and what they can be used for. Some of the more unusual pork bits we’ve eaten while staying here are: leg, belly, hocks, trotters, crackling, ears and brain. I’ve also learned how to make lard out of the fat, stock out of the bones, sausage meat and liver pate. One of the most fascinating things to me is working with the animal to use as much as possible so nearly nothing goes to waste thus respecting the animal as much as possible.
A gory day full of raw meat, but surprisingly it didn’t bother me. Some issues that have arisen when discussing the idea of setting up our own small holding with the attempt to be as self-sufficient as possible was whether or not we could deal with it. So far it doesn’t seem to be a problem.
