The trade off is we are in a beautiful environment. Very dry air, and hard water. Altitude also affects the temperature water boils at, and how long things take to cook. Soft boiled egg is 6 minutes. Fortunately there is an App to help with such things. Also means that hangovers can arrive early and hit hard.
