... pan fried rabbit with olives and roasted potatoes. Dolci was a torte. She paired each course with a different wine from this area. We learned new recipes and techniques that we, (mostly Tom) will be able to make again when we return home.

After our siesta, we walked up the hill from where we are staying into Montalcino. It's a quaint little town with amazing views. Looking forward to exploring more of Tuscany tomorrow.

In the morning, after checking out, we drove a few miles down the road to a winery. We had a great tour and learned all about how they grow the grapes and care for them. Atop a volcanic butte in the Paglia River Valley is Orvieto. Spectacular from any and every angle. Vertical cliffs shoot skyward, with the city walls appearing as an extension of these cliffs. The church spires and towers strain higher still.
