      After our last beautiful breakfast at Hotel du Collectioneur we are catching the Thalys train (fast) to Amsterdam. We arrived at our beautiful ship at about 2pm.       ... the baby slope who was going up and down the whole day without giving up. It is so fun to see the guys have so much fun with it, we can't wait to ski together with them soon. We had another ski weekend with Jim and Lucy in St Anton in March, which was fantastic, both ski and apres (Moserwirt with schnaps and Jaegermeister until we couldn't ski down to the village anymore and had to crawl/fall/slide back to the hotel.

      ... out to be quite interesting. They showed how a batch of Gouda cheese was made with 350 litres of milk heated to 29 degrees C, added rennet and pressed for to hours to remove the moisture. Its covered with plastic 4 times, and finally wax to seal it.

      We also saw clogs being made using green (freshly cut) blocks of poplar. It's really easy to cut and shape then dried. The drying makes the waterproof and very light. We then had the chance to taste Gouda cheeses made with ...

      ... mint sprigs. so refreshing! The Dutch speak impeccable English - no accent. And they are happy - but they pay 52%25 taxes...makes me feel better about our tax bill! Anyway, lots to talk about and we are having a great time! Dan has taken some incredible photos and has been a trooper hanging with his Dad and me!
