Today was "The Big Day"! We left our hotel at 5:15 am to get to a parmigiano reggiano producer located an hour north of Modena. We needed to plan our arrival to watch the entire cheese-making process. The cows are milked at 3:00am, and the process of making the large wheels of parmigiano starts a few hours later. The process starts with allowing the milk to rest so the cream settles to the top. The cream is then skimmed off and used to make butter. Rennet is added to the ...

... That day we had a fabulous meal in a little osteria with all Italians -- the best pumpkin ravioli I've ever had! We spent that afternoon at the Ferrari museum learning about the amazing history of that family and looking at the cars. Modena is only about a 40 minute driv from here.

But Bologna has been our favorite. We found a cafe that became our favorite for wine and a board of local meats and ...

... two nights. Dinner was at the oldest salumeria in Italy, established in 1605. A "salumeria" is a place where they make salami, but this was so much more. We had the most amazing dinner of gnoccho fritto (fried bread) topped with prosciutto or mortadella, a soup course of tortellini en brodo (tortellini in broth), and then guanciale (veal cheeks!!) with mashed potatoes. Dolce was a zuppe inglese (Italian custard) and a blackberry tart. It was all ...

... We were allowed to park outside the front door, felt like the Queen only couldn't get out of car very well as crammed too much with our luggage!!!! Saw La Ferrari before going to Restaurant Montana which had been recommended to us. Drivers and Ferrari fans go there. We were told we did not need to book but it was obvious it was popular once we arrived. Told us no table but we pleaded and they relented. You know when a place is popular when there is no menu, they just tell you ...

... The town is so pretty with beautiful buildings and so clean. Made it back to hotel for 12 noon departure to Maranello. Drove through Gotthard Pass which took us above the clouds. Stu always wanted to drive this. Lots of hairpin bends. Scary for passenger! Very beautiful until fog descended. 272 miles later at 5.15pm we arrive at Locanda del Mulino, our hotel. Pleasantly surprised as looks well ...
