For our last day in Chiang Mai, we decided to absorb our favorite part of the culture and learn how to cook the delicious food. Our course was taught at a little house outside of town. It was just the two of us with our instructor. Well my journey from Kanchanaburi to Chiang Mai got off to the worst possible start when I arrived at the train station for the 1444 train to Bangkok, only to be told that the train was delayed by a minimum of 4 hours. After a 16 hour train ride, we arrived in Chiang Mai around 6:00 am eager to find a place to stay, nap, and shower. The kind they most often use in Thailand are the ones that you scoop water out of an adjacent basin with a bowl and then toss it down the shute. Seems to work well. Dinner was a long time coming and I was so hungry that I was ready to eat my face. When it came I gobbled it up like there was no tomorrow. I can't remember the last time that I ate like that and I put away about twice what I normally do.
