When I was in Florence, last month (april 2008), I stayed in Florence centre, in via della Spada, near via dei Tornabuoni (a famous shopping street in Florence where you find many griffe).
Florence is perfect if you go on foot, monuments are all close, and to stay in centre of the city is the best solution.
I accomodated in a peculiar hotel. It was similar a luxury hotel and similar a bed and breakfast too. It is an old building, at the first floor there is the hotel. The hotel don't have a restaurant and you can have only the breakfast or same snack... Just like a bed and breakfast. But... The rooms are differents. The rooms are large, mine was a suite, very expansive, but furnishings are ancient and precious. In my suite there was a work of modern art and the owner explain me that in every room there are a work of art, but I saw those works in the passages and near the reception too. So the room are like a five star hotel, but this isn't a simple hotel. It seems a museum where you can spleep too. It's strange and beautiful at the same time, exclusive in some way...
For the dinner I din't have any problems, Florence is full of restaurants, little "trattorie" where you eat tipical foods and pay not much. I had dinner often at the "Trattoria della Spada" a small restaurant very nice, just near the hotel.

Cool, sounds nice. I liked Florence too, but guess what, I stepped in human feces when I was there! The park was a mess!
