You didn't mention whether you're planning on flying between the main hubs or if you want to go really native and pick up local buses etc. You can have a fantastic overland trip taking in all of those destinations but you will need more time than you'd think for it not to become stressful. Let's say you flew into Shanghai and left from Hong Kong. I'd give myself at least 5 weeks to really enjoy travelling/exploring.
I'd really recommend travelling by bus/train from Guilin to Kunming and then Lijiang but it's not easy going, especially if there's time pressure.
I think I mentioned to somebody else recently that it's not a bad idea to get to Guilin/Yangshuo last to chill out. I know many people get stuck there and don't move on.
I didn't get to Tiger Leaping Gorge, but my impression from people who've been there is that the hiking route is pretty well developed. You are not heading out into the wilderness anymore.
