In any decent size city in Morocco one should be able to find a selection of Riads within the Medina(the oldest part of the city). A riad is a classic architectural construction designed as a single family home. One of the great things about the Riad is that when its very hot outside, you can still remain cool in a Riad. It is always several storeys tall and there is always a courtyard within the center making it a bit like a square donut. All rooms open onto the courtyard. Heat rises to the top(the roof terrace gets super hot) but there is always a cool breeze circulating through all the rooms thanks to the courtyard.

These days, more and more people are buying old Riads, renovating them to restore their original beauty and turning them into Bed and Breakfasts. In any given city, if you google Riad you will find an overwhelming selection. Some can get very expensive. So much so that you may be turned off to this experience. But I strongly suggest that you splurge at least a couple of nights to enjoy a real treat.

One great Riad I recommend is in Rabat and is called Riad Oudaya. Its a real treat... They also serve five course meals. Its Moroccan food with a French twist.

Just remember that as most are burried in the medina (which doesnt typically have lots of street indications) they are hard to find. Ask the staff to meet you somewhere easy to find and take you to the Riad.

Haha! Yes, I second that - and once you leave the riad, you may have trouble finding it again - but of course, that is part of the fun!!

The riads aren't all expensive though - the ones we stayed in last week were around £11 per person per night, and that included a delicious traditional breakfast.
