Yeah its very easy to take a day trip to the surrounding desert. Red Rock Canyon and Death Valley are the two I know off the top of my head

Hard Rock Cafe has a $7.77 gamblers special meal that includes steak and sides, its not advertised so you have to ask. As for on strip hotels the Imperial Palace has the best location and price [$40 on weeknights, $100 on weekends]. With Cirque I'd definitely check ahead of time, they sell out pretty easily, and right now have great discounts on weeknight shows for the summer

I only ate at the midnight breakfast special at the Imperial Palace where it was like a steak, eggs, hashbrowns, and toast for a few bucks ($4 maybe?). With the exception of Fremont St which is easily reachable from the Duece there is not much outside the main strip that I have tried to do. Well, there is In and Out Burger but you need a car/taxi to do that, sigh. Also if you go to Mon Ami Gabi at Paris right at 4 when they open for the dinner crowd you can get a seat outside looking over the Bellagio fountains pretty easy
