I am about to embark on a road trip hyper.gif that will end in a 5 day festival. What should I take for food? Tell ALL your camping party festival secrets....

Very important are veggies that will stay fresh! I'm assuming that you're taking a cooler.....

- carrots and hummus
- cucumber ( you can slice it on the road!)
- peppers. Orange and yellow are my fav!
- fig newtons. (i love those cookies!)
- curried chicken salad
- cheese sticks
- nacho chips & dip

Those are my favorite things to eat on the road!

Chickpeas dusted with cumin, drizzled with oil, tossed with fresh garlic, seasoned and roasted in the oven. Take them with you in a bag or a pot and eat them like you would nuts whenever they take your fancy. Make and take plenty though - they'll be devoured in seconds! drool.gif

Don't forget your pie iron. You know, one of those cast iron cookers that's the size of a piece of bread? You fold it in half and put it over the fire thumbsup.png
Now I see all these healthy food suggestions, and that's cool! But a good old fashioned stick-to-your-ribs pie iron will nourish a girl too. We have 4 favorites:
ham and cheese
apples, butter and cinnamon
pizza stuff like pepperoni & cheese
scrambled eggs, ham & cheese

Where do you get a Pie Iron? Any camping store? Your combos sound yummy...

I really like the chickpea recipe and where I am going, I am sure all the veggies are gonna love it! Thanks guys! Keep the suggestions coming!

Walmart or any camping store. Coleman makes one. Other brands too. We have a single and a double. It is a 2 sided cast iron contraption, hinged at the top (can be seperated) with a long handle. You basically build your creation on one side and close it up. Big bread does not fit...it hangs out the sides. I trim it off with a knife so it doesn't catch fire thumbsup.png

We can get pretty creative with this thing. I even spooned beef stew into it once. Sealed right up between the 2 pieces of bread. It was a FEAST fit for kings.

Where ya goin Carm? We're heading off in about an hour to the Okanagan to go camping... it's the closest thing I have to a tradition - every August long weekend we head out there (last year John proposed out there!). wub.gif

this time we are going simple as we usually cook up a storm, but that takes work and preparing!

So, typical snack foods...
every type of fruit you can imagine (my latest addiction is vanilla yogurt with blueberries!), I'm with Jess on the peppers - I love my red, orange, yellow peppers with cucumber and throw some feta on top (add raw spinach and drizzle oil and vinegar on top - yum!). And of course easy stuff like hot dogs and hamburgers, pasta, steak, bacon and eggs for morning. Simple always seems to be the best. smile.gif

Oh, can't forget our fav - peel a banana but keep it wrapped in its skin, then put some chocolate over it, wrap it all in foil and put over the fire for a minute or two... YUMMY snack!!

Oh I will be in the same neck of the woods as you thumbsup.png Figures huh? I am heading to Christina Lake to visit an old friend then off to a music festival in Salmo for a few days. I am quite exited about it all...
