You could also take a ferry up the Pearl River Delta from Hong Kong, then take a bus to Guilin. That would be interesting and fun.

Taiwan - who knew?

... issue. As China is being more and more included on backpacker's itineraries and to travel directly to or from Taiwan from China is not possible, most people prefer to use Hong Kong as a springboard into NE Asia. Taiwan kind of gets missed out.
