If you're asking me, I would pick Bombay because I would like to visit Goa. However, Goa might not count as the "real India" to you... I heard it's very touristy and part of the well worn backpacker track.

Also to fly from the east coast, Mumbai (Bombay) is slightly cheaper, but Delhi is a little less overwhelming and more centralized.
