... out to be the Texas Motor Speedway. I was not able to get a photo of this immense facility, but I found one on the internet. This place is impressive, to say the least.

... on USGT-7 and again wound through the desolate country side of East Texas. I expected maybe a slight increase in traffic due to the weekend, but it was not the case, if anything there might have been less. At Crockett, TX I turned on to USGT287 and then 363, crossing in Louisiana mid afternoon. The riding was great, smooth empty roads, 30 minute interval stops to drink hot water!

About the last 50 miles of east Texas is the oddly named Big Thicket National ...

... to 6 stops on the food tour, all local, all types including a coffee shop, supermarket, bar, and bakery. Our favorite was a maple boudin (kinda like sausage) biscuit. Serina liked it so much she became one of those people who takes pictures of food.

Then we stopped at Vermillionville to listen to their weekly Cajun jam session. It's a really tight community!

We spent the next couple days at the Briggs residence utilizing the skilled labor and wonderful selection of tools available to nail down our rig! ... Island to take a tour of the Tabasco factory where we got to hear the history of the island and received some little sample bottles to bring home.
