... lot we were served Crawfish Maque Choux and boudin. Boudin is a Cajun sausage made with pork (sometimes seafood or beef), rice, garlic, green peppers, celery, and spices. They are not hot, but flavorfully spiced. Maque Choux is a corn dish simmered with diced aromatic vegetables. It’s served over rice and topped with steamed
crawfish. What a delicious way to start the afternoon.

Woke about 9:00 this morning to the smell of freshly brewed coffee, biscuits and sausage lovingly prepared by Darla. Woke up in the morning around 8:30 with no way to hold our head's that didn't hurt, went downstairs for a coffee before going to pack in preparation for our next leg. Had to walk about 6 blocks to pick up the car from the secure carpark, the walk freshened us up a little.
Hit the road about 10:00 and crossed the Mighty Mississippi for the first time this trip stopping at IHop for breakfast at Laplace. Our next stop was at a Visitor ...
