    What a wonderful learning experience. Under the guidance of a chef we learned to handle and stuff chilis. Each worked on each dish. Then ate the labors!

    What a great crash course in New Mexican cuisine and everything chile. Our chef Michelle Roetzer was fantastic, passionate, knowledgeable, and funny, everything you want when seeking to be inspired about a new cusine. The poblano lime jam was sublime and invest in one of tehir chile roasters - they work and make trying the menu yourself when you get home a lot of fun

    Our first cooking class ever and we ware in chili heaven!!! This was a hands-on class learning to make stuffed chilies: chili rellenos, Ancho's stuffed with beans and chorizo and green chilies stuffed with ground beef with lots of things added and jalapenos stuffed with a cream cheese.
